Studies have shown that mung bean protein and its peptides have various physiological functions such as anti-oxidation, anti-tumor, anti-virus, and lowering blood pressure and blood lipids. With the development of proteomics research, researchers found that when the human body consumes protein, most of it is absorbed and utilized in the form of oligopeptides, while only a small part is absorbed in the form of free amino acids. Some oligopeptides also have unique physiological functions that the source protein and free amino acids do not have, such as regulating human physiological functions and preventing and curing diseases.
Composition
Mung bean is a high-protein plant with a protein content of 25% to 28%. It mainly contains globulin, albumin, gliadin, and glutenin. Close, is a high-quality natural vegetable protein. Different mung bean varieties and different extraction methods may lead to different protein content. The study on the graded extraction of four kinds of mung bean proteins found that in mung bean, albumin is 49.1%, globulin is 23.6%, gluten protein is 19.42%, and gliadin is 7.5%. The content of globulin is more than 60%, albumin is 25%, gluten is about 10%, and gliadin content is the lowest. Amino acid is rich in mung bean protein, which is scored according to WHO/FAO. The chemical scores of amino acids in mung bean protein are all higher than the recommended value. Lysine is known as "the first limiting amino acid", and its content in the grains people eat daily is very small. However, the relative content of lysine in the total protein of mung bean is as high as 7.7%, which is close to the content in eggs. In the analysis of the amino acid composition of albumin in mung bean seeds, the content of lysine is 7.1%. The average content of lysine in the amino acid composition of mung bean protein is 6.3%. The literature reports on the content of lysine are not the same, but its content is maintained at a relatively high level, which shows that the content of amino acids in mung bean protein is balanced to meet the nutritional needs of the human body.
