Trans-Cinnamaldehyde is a yellowish oil - like liquid. Melting point -7.5ºC, boiling point 253ºC (partial decomposition), 127ºC (2.13kPa), relative density 1.0497 (20/4ºC), refractive index 1.6195, flash point 71ºC. Slightly soluble in water
Trans-Cinnamaldehyde is an important synthetic fragrance that is used to produce vegetable, lily of the valley, and rose, and to produce cinnamic aldehyde in food flavors. Aldehyde is used in fruits such as apple and cherry in addition to spices, cinnamon, and sweet wine. The amount of cinnamaldehyde used in food was 10ppm for cool drinks, 8ppm for ice cream, 700ppm for candy, 200 PPM for snacks, 5,000 PPM for chewing gum, 20ppm for flavoring, and 60ppm for meat. Cinnamaldehyde is also an intermediate in medicine.
