Carmine, also known as edible red No. 102 (Japan), edible red No. 7, ponceau 4R, scarlet and bright scarlet, is an azo colorant in aqueous solution. Its chemical name is 1 - (4 '- sulfonyl-1' - naphthylazo) - 2-naphthol-6,8-disulfonic acid trisodium salt, which is an isomer of amaranth, with the formula C20H11O10N2S3Na3. Carmine is one of the most widely used and widely used monoazo synthetic pigments in China. In recent years, it has been reported that carmine and Sudan I banned by EU standards belong to azo pigments, and azo compounds can be metabolized into aromatic amine compounds, the precursor of mutagens. Scope of the application and amount of the use stipulated in China are same as those of the amaranth.
