Wheat Gluten, with a protein content of more than 80% and a relatively complete amino acid composition, is a nutritious, high-quality and low-cost plant-based protein source. Wheat gluten is mainly composed of glutenin with small molecular weight, spherical shape and good extensibility and glutenin with large molecular weight, fibrous shape and strong elasticity. When gluten absorbs water, it forms wet gluten with a network structure, which has good viscoelasticity, extensibility, thermal coagulation, emulsification, and film formability.
Application:
The most basic use of gluten in the food industry is to adjust the protein content of flour. Many local flour manufacturers add gluten to low-gluten flour to meet bread flour requirements without having to mix expensive, imported high-gluten flour. This method has been widely adopted in Europe. Likewise, breadmakers use gluten to fortify general-grade flour without having to stockpile large quantities of high-gluten flour.
Feed industry
Wheat gluten has high protein content and relatively complete amino acid composition. In the feed industry, its excellent protein source can be used as feed for high-end animals and pets.
