Sunflower seed protein is a protein product that uses degreased sunflower seed cake as raw material and removes the shell and phenolic acid compounds such as chlorogenic acid and caffeic acid. The main component is globulin, followed by albumin and a small amount of gluten and gliadin. In the amino acid composition, the content of lysine is low, while the content of other essential amino acids is high. Sunflower protein has good water absorption, oil absorption, emulsification and foaming properties. Sunflower seed powder can absorb 170% of water and 208% of oil, and its oil absorption is higher than that of soybean protein. Sunflower seed protein concentrates and isolates have the foaming and stirring properties of fresh egg whites.
Applications
1. For general food. Adding it to bread and other foods can strengthen nutrition, make up for the lack of essential amino acids in flour, increase the elasticity of breadcrumbs, and prevent the aging of starch in flour.
2. Good additive for baby food. Sunflower protein is lower in lysine but higher in methionine than soy protein. Combining sunflower seed protein with soybean protein and adding it to infant food can play a role in nutritional fortification
3. Additives in meat products. Adding sunflower seed protein to meat products such as sausages has less shrinkage during smoking, which can not only prevent oil separation and reduce weight loss, but also increase the tenderness of sausages and make the products more palatable.
4. Make beverages such as artificial milk. Sunflower protein has a soft smell and no beany smell, so it is a good raw material for high-grade beverages and artificial milk.
