Cold break 36-38% Brix tomato paste is typically made from high-quality, vine-ripened tomatoes that are hand-picked and selected for their firmness and ripeness. The tomatoes are washed, sorted, and then crushed to release their juices. The juice is then heated to a specific temperature and held there for a short period, typically between 10-20 seconds. This heating process is called the"cold break"because the tomatoes are heated to a lower temperature compared to traditional hot break processing, which can cause a loss of flavour and color. Once the juice has been heated, it is quickly cooled down to stop the cooking process. The cooled juice is then strained to remove any seeds and skins, and then cooked for several hours to reduce the water content, resulting in a thick, concentrated paste. Cold break 36-38% Brix tomato paste has a bright, intense tomato flavour, with a deep red color. It has a thick, smooth texture and a high viscosity, making it perfect for use in recipes that require a strong tomato flavor and a thick consistency.
