L-glutamic acid is an amino acid with the molecular formula C5H9NO4. Appearance is white crystalline powder, almost odorless, with special taste and sour taste. Decompose at 224~225ºC. Insoluble in water.
Use
1. L-glutamic acid is mainly used in the production of monosodium glutamate, spices, salt substitutes, nutritional supplements and biochemical reagents. L-glutamic acid itself can be used as a drug, participate in the metabolism of protein and sugar in the brain, and promote the oxidation process. It is mainly used to treat hepatic coma and severe hepatic insufficiency, etc., but the curative effect is not very satisfactory; combined with antiepileptic drugs, it can still treat epileptic petit mal seizures and psychomotor seizures. Racemic glutamic acid is used in the production of drugs and also as biochemical reagents, etc.
2. It is usually not used alone, but used in conjunction with phenolic and quinone antioxidants to obtain a good synergistic effect.
3. Glutamic acid is used as a complexing agent for electroless plating.
4. Used in pharmaceuticals, food additives, and nutritional fortifiers;
5. Used in biochemical research, and used in medicine for hepatic coma, prevention of epilepsy, reduction of ketonuria and ketosis;
6. Salt substitutes, nutritional supplements, flavoring agents (mainly used in meat, soup and poultry, etc.). It can also be used as an inhibitor of crystallization of magnesium ammonium phosphate in canned aquatic products such as shrimp and crab, with an dosage of 0.3% to 1.6%.
