The production process of maltitol involves the conversion of starch into malt syrup, which is then hydrogenated to produce maltitol pulp.
Maltitol has good temperature and chemical stability, and degradation occurs when it is heated to more than 200ºC.
The sweetness of maltitol is about 0.9 times that of sucrose, the taste is pure, close to sucrose, and does not cause dental caries.
Maltitol can promote the absorption of calcium, suitable for diabetic patients.
